Snowman Soup
I was recently given an oatmeal chocolate chip cookie recipe by a friend. When I asked her what she was using for a cup of soup, she mentioned this recipe. So I adapted it for our winter weather...
1. In a large soup pot bring to a boil 1 quart of organic vegetable stock and add the vegetables and oatmeal. Cook for 30 min, or until vegetables are soft.
2. Turn off heat, and add the milk. Use a potato masher to crush the oatmeal into the soup. It will blend as you mash.
3. In a blender blend the soup to the desired consistency.
4. Add salt and pepper to taste.
5. Freeze the soup in individual portions, wrapped in aluminum foil.
I use the following ingredients:
1 quart organic vegetable stock1 cup oatmeal1 large carrot chopped1 large onion chopped1 large sweet potato chopped1 lb. small red potatoes
